Five ways with…breadcrumbs #1

Well I hope you’ve all been busily whizzing up your old stale bread to create a variety of delicious breadcrumbs?  Wondering what to do with them now?  Well here are a few ideas…

Number 1 – breaded chicken goujons 

Crispy Pesto Breadcrumbs Chicken

You will need:

2 chicken breasts cut into strips

2 eggs

1 oz flour

2 oz breadcrumb mix (my suggestion – garlic, lemon zest and thyme)

  • Pre-heat oven to 180C and grease a baking tray with some oil
  • Place the flour in one bowl, the beaten eggs in another and the breadcrumbs in a third
  • Take each strip of chicken and first coat in the flour (shaking off the excess), then dunk in the egg and finally roll about in the crumbs (prepare to get your hands dirty!)
  • Shake off the excess crumbs and then place on the baking tray
  • Put finished goujons in the oven and bake for 30 mins – YUM!
