Banana Custard Loaf

Banana Custard Loaf


2 over ripe bananas

2 eggs

100g vanilla sugar (made by adding a few vanilla pods to a packet of castor sugar)

75g castor sugar

1tbs Sailor Jerry’s rum (or normal rum)

100mls pouring custard

225g self-raising flour

1tsp baking powder

  • Turn the oven on to 180C
  • Mash the bananas into a large bowl
  • Add the sugar, eggs, rum and custard and mix together
  • Measure out the flour and baking powder
  • Add to your banana mix & stir together
  • Pour into a loaf tin (grease if necessary)
  • Put in the oven for approx 50 mins (use a skewer to check if it’s done – if it comes out dry then it’s ready)

Serving suggestion

This tastes even better if it’s left for a few hours – or ideally, overnight.  Other than that, just gobble down with a nice cuppa.
