Food hugs #4 – Carbs
Carb me up Scotty!
Ah, carbs. The food group that everyone loves to hate. They tend to be what I turn to first if I’m feeling a little sub-par. I have a fave for pretty much every carb..
Potato
for ultimate comfort only mashed will do, although a big plate of crispy chips covered in salt and vinegar comes a close second
Rice
I love risotto. Mushroom risotto takes me back to a lovely weekend in the Lake District that Nick and I spent for his birthday. We found a cosy little restaurant and sat by the window. It was one of those perfect evenings and mushroom risotto takes me back there every time! I can’t miss out Paella either – one of my all time favourite meals.
Bread
I’ve recently been converted to bread and butter pudding and it has now become a firm favourite. I recently tried my hand at making it with some left over pain au chocolat and I have to say, it was delish!
Pastry
well it’s hard to pick but if pushed, I’d go for a beautiful steak and kidney pie with mash (of course) and lashings of gravy
Pasta
last, but by no means least, pasta! Not a week goes by when we don’t have pasta of some sort. It’s all good and it’s all comforting – even if you try to make it healthy in some sort of pasta ‘salad’. My ultimate comfort food has to be macaroni cheese the way my Mum makes it. It ticks all of the comfort boxes – memories of home and hearth, creamy sauce, carb overload and well, it’s delicious. Try out the recipe (don’t tell my Mum!) and see for yourself!
